Olina Nikolini grew up in northern Greece, the daughter of fine shoemakers, with a wealth of rich family recipes and a passion for fashion. She attended a private American school in her home country and traveled throughout Europe tasting flavors of other countries before crossing the pond and making the U.S. her home in 1991. Throughout college and her career in shoe design, she carried with her the pastry and food recipes of her family that she had been enjoying since a young age, tailoring them to her own taste for health and nutrition, and fine-tuning them for friends. She finally decided to settle in Dallas and turned her attention toward owning and operating her first deli, Organicity, to offer the city of Dallas unique, healthy tastes of her home country and her travels abroad. With the success of the deli, she was able to expand into Nikolini’s, which spurred Sokolata, the specialty dessert side of her healthy, anti-aging, organic-focused food ventures.
